Mix the base
Mix the oats, yogurt, milk, chia seeds, maple syrup, cinnamon and the pinch of salt thoroughly in a bowl. The salt sounds like a detail, but it significantly enhances the sweetness without you needing more syrup. Stir really well so that the chia seeds are distributed and do not clump at the bottom.

Fill into jars
Distribute the mixture between two glasses or screw-top jars and fill them to a maximum of three quarters, because the mixture will swell noticeably overnight. Close them well. Screw-top jars are practical because you can take them with you directly.

Let soak
Place the jars in the fridge overnight, or for at least six hours. The oats completely absorb the liquid, the chia seeds form a gel and everything becomes creamy and spoonable. For less than six hours, the flakes remain grainy.

Check consistency
Give the oats a vigorous stir in the morning. If they are too firm for you, add milk by the spoonful until they suit you, because the absorbency varies significantly depending on the brand of oats. You can save oats that have turned out too thin with an extra spoonful of chia seeds and a ten minute wait.

Top and serve
Distribute banana slices, berries and chopped nuts on top and add a dollop of nut butter if needed. The toppings are deliberately added now, because nuts soaked overnight lose their bite and bananas become brown and mushy.

- Quick oats become creamy, rolled oats remain firm to the bite. Both work, but yield a different result.
- Do not omit the pinch of salt. It makes the difference between bland and well-rounded overnight oats.
