Cups to grams – a conversion table for 129 ingredients

A cup of flour weighs 125 grams, a cup of honey 340. The difference is density, which is why there is no single factor that converts cups into grams – only a table, ingredient by ingredient. Here it is.

129 ingredients, grouped by aisle. What is missing is what nobody measures in a cup, not even in an American kitchen: meat, fish and vegetables are weighed in ounces there, and that needs no density at all.

Why a single factor cannot work

A cup measures volume, a gram measures mass. Density sits between them, and it differs per ingredient – icing sugar packs loosely, granulated sugar densely, honey flows. Use an average and you get water right and nothing else: a cup of rolled oats is 90 grams, a cup of salt 273. That is a factor of three between two rows of the same table.

Spooned and levelled

The values apply to dry goods spooned loosely into the cup and levelled off at the top – “spoon and level”, the convention American recipe kitchens agreed on. Dip the cup into the flour bag instead and you take out up to 20 percent more, and the dough turns tough. Brown sugar is the exception: by convention it is packed firmly, and the 213 grams in the table are measured that way.

Which flour does it mean?

For density the type number is irrelevant – it measures mineral content, not how the flour packs, and every wheat flour weighs practically the same. For shopping it matters a great deal: German Type 550 is T55 in France, 0 in Italy and all-purpose in the United States.

Frequently asked questions

How many grams is 1 cup of flour?
125 grams for white wheat flour, 120 for wholemeal. That assumes the flour is spooned loosely into the cup and levelled off – dip the cup into the bag and you get up to 150 grams. The type number makes no difference to the weight.
How many grams is 1 cup of sugar?
200 grams for granulated sugar, 120 for icing sugar and 213 for brown sugar. Icing sugar is the lightest of the three despite the same sweetness, because it packs more loosely; brown sugar is packed firmly into the cup by convention.
How many grams is 1 cup of butter?
227 grams – that is 2 sticks or 8 ounces. It is the one value in this table American bakers know by heart, because the wrapper carries the markings itself.
What do tsp and tbsp stand for?
tsp is teaspoon, tbsp is tablespoon. One tbsp is three tsp, and one tsp measures 4.93 millilitres. The difference to a metric tablespoon is 1.4 percent – not worth converting.
How much is half a cup?
118.3 millilitres, and in grams half the value in the first column. The table lists ½, ⅓ and ¼ cup separately because American recipes work in exactly those steps – they are stamped on every measuring cup set.
Are US cups and British cups the same?
No. This table uses the US cup of 236.6 millilitres, the unit behind practically every English-language recipe online. The old British cup held 284 millilitres, the Australian one holds 250 – a recipe that means those will say so.
