To ensure the bowl is truly thick enough to eat with a spoon and does not melt into a regular smoothie, only frozen fruit and the smallest possible amount of liquid go into the blender. It is ready in five minutes and is a great way to use up leftovers from the freezer.

Why this works

A smoothie bowl is technically a sorbet rather than a liquid. Its stability comes from the ice crystals in the frozen fruit, not from thickening agents. Every splash of liquid lowers the freezing point of the mixture and causes crystals to melt. This is why the bowl suddenly turns into a drink once a certain amount of liquid is reached. Fresh fruit brings its own water and makes the same mistake from the inside.

  • Use liquid extremely sparingly, and prefer working with the tamper over pouring in more milk.

We add up reference values for every ingredient and divide by the number of servings. These assumptions are baked in:

  • Reference values per 100 g – for the raw ingredient, exactly as listed.
  • Tinned goods count at drained weight, bone-in meat at purchase weight: you eat about 70 per cent of a chicken thigh and leave the rest.
  • Water evaporates as you cook. The energy stays in the pot, the weight does not – so the figure is per serving, not per 100 g of finished dish.
  • Anything listed without a quantity – “salt and pepper” – is not counted.

A guide value, not a lab measurement: no two onions weigh the same, and fat content varies from pack to pack.

Frequently asked questions

Why is my bowl too liquid?

Too much milk or fresh instead of frozen fruit. Start with very little liquid. You can always add more, but you cannot take it out.

Do I need a high-powered blender?

It helps a lot. With a regular blender, let the fruit thaw for five minutes and work in smaller batches.

Can I prepare it in advance?

Only to a limited extent. Portion the ingredients into freezer bags in advance, so blending in the morning only takes two minutes. Once blended, it does not keep.
