Five ingredients, ten minutes, huge impact. Aglio e Olio relies on the quality of a few things: good olive oil where the garlic gently turns golden, a little peperoncino for warmth, and starchy pasta water that emulsifies everything into a glossy sauce. It is the perfect midnight meal and proof that simple is often best.

Why this works

Oil and water do not mix, but here they do anyway because the starch from the pasta water acts as an emulsifier and keeps the oil droplets suspended. This turns two ingredients into a sauce that shines and clings instead of pooling at the bottom of the plate. The garlic must steep gently over medium heat until golden. As soon as it turns brown, its flavor tips into bitterness within seconds.

Step-by-step instructions

Our best tips

  • The quality of the olive oil is crucial, so use your best one.
  • Only let the garlic turn golden, never brown. Bitter garlic ruins the entire dish.
  • Tossing with pasta water is the trick for a silky sauce, otherwise it remains oily.

Tasty variations

With anchovies

Dissolve two anchovy fillets in the oil for savory umami depth, though it will no longer be vegan.

With lemon and breadcrumbs

Top with a little lemon zest and toasted breadcrumbs for freshness and crunch.

Nutrition facts

Calculated from the ingredients – how we do it

We add up reference values for every ingredient and divide by the number of servings. These assumptions are baked in:

  • Reference values per 100 g – for the raw ingredient, exactly as listed.
  • Tinned goods count at drained weight, bone-in meat at purchase weight: you eat about 70 per cent of a chicken thigh and leave the rest.
  • Water evaporates as you cook. The energy stays in the pot, the weight does not – so the figure is per serving, not per 100 g of finished dish.
  • Anything listed without a quantity – “salt and pepper” – is not counted.

A guide value, not a lab measurement: no two onions weigh the same, and fat content varies from pack to pack.

Frequently asked questions

Why is my Aglio e Olio bitter?

The garlic was cooked too hot or too long. Let it steep only until golden over medium to low heat, and take the pan off the heat in time.

How does the sauce become creamy instead of oily?

The starchy pasta water is key. Add a ladle to the pan and let it bubble up with the oil, then toss the pasta in it to emulsify.

Does Parmesan belong in it?

In the purist version, no, and without it, the dish remains vegan. However, a little cheese does not hurt if you like it, as it is purely a matter of taste.
