Baked ham and cheese sandwich with béchamel, the French bistro classic that is no ordinary toast. The difference from a regular sandwich lies in the béchamel. It goes inside and on top, keeping the sandwich juicy and browning in the oven to form a crust. Adding a fried egg on top turns it into a Croque Madame.

Why this works

A Croque Monsieur differs from a toasted sandwich because of the béchamel, and it has two jobs that both relate to moisture. On the inside, it keeps the bread juicy because its starch binds water and releases it only slowly during baking. Without it, the bread would dry out under the broiler before the cheese has melted. On the outside, it forms the actual crust. Its milk proteins and lactose brown significantly faster at 220 degrees via the Maillard reaction than cheese alone, resulting in the typical mottled, deep golden brown surface. That is why the cheese does not go directly on the bread, but in and on the béchamel. Melted cheese alone separates into fat and protein under high heat, but bound in the béchamel it remains creamy.

Our best tips

  • The béchamel can easily be seasoned more strongly than it should taste on its own. It spreads over the bread, ham and cheese and is heavily diluted in the process.
  • Use Gruyère or Comté instead of Gouda. Both melt evenly without sweating fat and bring the nutty note that goes well with the mustard in the béchamel.
  • For the Croque Madame, place a fried egg with a runny yolk on top. The yolk runs into the béchamel when cut and is the real reason for the variation.

Vegetarian

Replace the ham with thinly sliced, sautéed mushrooms and add an extra teaspoon of mustard to the béchamel.
