Chickpeas in a dark, spicy tomato sauce with amchur for the typical fruity acidity. Unlike many curries, this dish manages completely without cream and relies on slowly browned onions and the right sequence of spices. Wholesome, vegan, very affordable, and ready in twenty minutes of active time.

Why this works

Onions contain sugar and amino acids, which are the two starting materials of the Maillard reaction. When sautéed until translucent, they are only soft. It is only during browning that the hundreds of compounds are created that give the dish its dark depth. This takes time and medium heat because the cellular water must evaporate first. Amchur, dried mango powder, provides fruit acid without liquid. Unlike lemon juice, it does not dilute the sauce.

  • Amchur provides the typical fruity acidity. Without it, the juice of half a lemon at the end works too.

Soak 250 g overnight and boil until soft for 50 minutes, the result is significantly more aromatic.

Is chana masala vegan?

Yes, completely in this form. Some restaurant versions contain ghee or cream, but neither is necessary here.

Why isn't my sauce getting dark?

The onions were not brown enough. Twelve minutes sounds long, but it is really necessary, and the pot should not be too full.

Can I freeze it?

Very well, for up to three months. Chickpeas retain their texture better than many other legumes.
