The trick to avoiding a dry meatloaf is a panade: white bread soaked in milk, which binds the meat juices inside and prevents them from escaping during baking. A Sunday classic of German home cooking, though it borrowed the sweet and sour glaze from American meatloaf, which once crossed the Atlantic with German emigrants.

Why this works

The soaked white bread forms a starch gel with the milk, which binds the meat juices and holds them in during baking, the same technique used for meatballs, just larger. The second point is mixing: kneading the mixture releases myosin from the muscle protein, which cross-links into an elastic network during cooking. That is exactly what you want for boiled sausage, but here it leads to a bouncy rather than tender roast.

  • Mix the meat only briefly. If you knead it like dough, you will get a firm, tough meatloaf.
  • Bake free-standing instead of in a loaf pan, so a crust forms all around and the fat drains away.
  • Observe the resting time. Sliced straight out of the oven, the meatloaf will fall apart and lose its juices.
